Vegan Easy Challenge Launch At World Vegan Day November 1 @ the Abbotsford Convent
Join us for the launch of the Challenge at World Vegan Day! This year WVD is at the Abbotsford Convent (1 St Heliers Street, Abbotsford, Victoria) which proved to be such a great venue for the event last year. ALV's Vegan Easy Challenge will be a great way to celebrate going vegan on a day that is all about veganism! There are lot's of great prizes for participants of the Challenge including $1,000 First Prize so register now!.

Vegan Easy Challenge BBQ
Nov 15 South Melbourne Market
We are also hosting a Vegan Easy Challenge BBQ at the busy South Melbourne Market. Enjoy shopping at this popular market while feasting on vegan skewers/sausages/burgers at ALV’s ‘sausage sizzle’. All welcome!

About the Vegan Easy Challenge...
This Spring ALV is launching Australia’s first 30 Day Vegan Easy Challenge! What a great way to discover just how easy it is to go vegan. Our challenge will set you on track to eating healthier, saving animals, saving money, saving water and saving the planet all at the same time!
Our chefs will provide you with a fantastic range of recipes that are not only healthy and easy to prepare but mouth watering delicious. Every participant will save the lives of numerous animals during the 30 days. So there are lots of winners! You will get a full 30 day menu which includes varieties from Mushroom Risotto and Tofu Turkey through to Vegan Trifle and Lemon Cheesecake. The Vegan Easy Challenge website veganeasy.org will also let you know great places to shop, how to spot what’s vegan and links to good nutrition.

Here's a taste of what's in store...
Sticky Date Pudding
with Butterscotch Sauce
This is a really naughty but nice dessert, it’s perfect served with vanilla soy ice cream (eg. So Good - available in most supermarkets). Medjool dates work best in this recipe, but if you can’t find them you can use regular dry dates.
Ingredients for Pudding
1 ½ cups dates, finely chopped or blended in a food processor
1 ½ cups water
1 tsp bicarbonate of soda
¾ cup tightly packed soft brown sugar
½ cup vegan margarine (eg. Nuttelex)
1 tsp vanilla extract
1 ½ cups self raising flour
3 tsp ‘No Egg’ replacer
3 tbsp water
Ingredients for Butterscotch Sauce
1 x 300ml carton Soyatoo soya topping cream
¾ cup soft brown sugar
2 tablespoons vegan margarine (eg. Nuttelex)
1 ½ tbsp golden syrup
½ tsp vanilla extract
Directions
Preheat oven to 180°C.
Grease and line a 20cm springform cake tin.
Place dates and water in a small saucepan and bring to the boil. Turn off the heat, add the bicarbonate of soda and set aside for 20 minutes.
Whisk together sugar, margarine and vanilla extract with an electric handmixer or in food processor.
In a small bowl combine the egg replacer and water then combine well with the sugar mixture. Sift in the flour and mix well.
Add the date mixture. Combine well then pour into the prepared cake tin.
Cook for 40-50 minutes, until a skewer or knife comes out clean.
Leave to cool in the pan while you make the sauce
Place all the sauce ingredients in a pan, place over a medium heat and bring to the boil. Reduce heat and simmer gently for approximately 2 minutes. Spoon the sauce over the warm pudding.
