 
"This is a healthier alternative to scrambled eggs. It’s great served on toast with tomato sauce, or with veggie sausages, beans etc. for a full cooked breakfast or brunch."
Ingredients
(Serves 3-4)
200g tofu, crumbled
1 small onion, finely chopped
1 tbsp tamari
1 tbsp savoury yeast flakes (optional)
½ tsp turmeric
½ tsp vegetable stock powder
3 tbsp water
Approx 2-3 tbsp chopped parsley and chives
Freshly ground pepper
Olive oil for frying
Directions
Heat approx 1 tablespoon of olive oil in a frying pan.
Fry onion gently until starting to brown.Add tofu to pan and continue cooking for a minute or two, stirring occasionally.
Add tamari, yeast flakes, turmeric, stock powder and water to pan. Stir through and fry for a further minute.
Remove from heat and stir through the fresh herbs. Add cracked pepper to taste.
