"This is a quick and easy lunch option, it doesn’t even call for a recipe! Simply cook the schnitzel as per the packet instructions and leave to cool. Spread your favourite bread or roll with vegan margarine and vegan mayonnaise, add your choice of salad and the schnitzel and voila! My choice is a French baguette with rocket, cucumber and red onion, and if I feel like being a bit extra healthy some fresh sprouts and grated carrot.
