My way with Bombay Bites

"Bombay Bites are bite sized pieces of tempeh in a spicy Bombay sauce.  You can find them in the refrigerated section in many Coles.  They’re a real hit at ALV, and this is my favourite way of cooking them…"


Ingredients

(Serves 3-4)

1 packet Bombay Bites
½ zucchini, thickly sliced then quartered
6 button mushrooms, quartered
¼ cauliflower, cut into small florets
1 small onion, finely chopped
1 garlic clove, minced
2 tsp curry powder
½ cup boiling water
⅓ cup frozen peas
8 cherry tomatoes, halved
Salt and pepper
Olive oil for frying

Directions

Heat oil in a large frying pan.

Add onions and garlic and fry for 1-2 minutes until soft.

Add zucchini, mushrooms and cauliflower and continue frying for a further 2-3 minutes.

Add curry powder to pan and stir through vegetables leaving to cook for approximately a further 30 seconds. 

Pour the water into the pan together with the Bombay Bites, peas and tomatoes.  Season to taste.

Leave the water to simmer for a couple of minutes until the sauce has reduced.

Serve with basmati rice.
